Ingredients for Tamarind Chutney
2 cups water, 1/2 cup tamarind, 2/3 cup jaggery, 1 inch ginger (julienne cut), 1 tsp degi red chilli powder, salt as per taste, 1 medium sized ripe banana (chopped),
For tempering the chutney
1 tbsp sesame oil, ½ tsp cumin,
½ tsp fennel, 2-3 dry red chillies (half crushed),
for shortbread dough
1/2 or 2/3 cup rava, ½ cup all purpose flour, ¼ tsp baking soda, salt as per taste, ½ tsp turmeric water/yellow color

½ cup gram flour, 1 tsp degi red chilli powder, salt as per taste, ½ tsp ghee, ¼ tsp baking soda, water,
Ingredients for Chaat Masala
1 tbsp cumin, 1 tbsp fennel seeds, ½ tbsp coriander, 1 tbsp black pepper powder, 1 tsp degi red chilli powder, ½ tsp salt, ¼ tsp dry mango powder

For stuffing on top
1 big potato (boiled and chopped), 1 small onion (chopped), 2 fresh green chillies (chopped), ½ cup boiled brown gram, few chopped coriander leaves, black salt as per taste, juice of ½ medium lemon, ½ tsp black pepper powder,

Make Tamarind Chutney
Put water, tamarind and jaggery in a vessel and boil for 6-8 minutes on medium flame. Now add ginger, red chilli powder and salt and boil for 5-6 minutes on medium flame. Then filter the mixture thoroughly and put the filtered mixer back into the vessel and cook.
Now heat sesame oil in a tadka pan and add cumin and fennel in it. Then add dry red chilli and cook for a few seconds. Then pour this tempering on the boiling tamarind mixture and keep cooking until it becomes thick like chutney.
How to make chaat masala?
To make Raj Kachori Chaat Masala, lightly fry cumin, fennel, black pepper powder and coriander in a pan.
Take it out in a bowl and add red chilli powder, salt and mango powder and grind it to make a powder. Keep it aside.

Mix rava, flour, baking soda, salt, turmeric water or yellow color, water in a bowl and knead a soft dough. Cover it and leave it to rest for 10-15 minutes.
Prepare the Stuffing
In a bowl, add gram flour, red chilli powder, salt, baking soda, baking powder, ghee, some water and make a thick paste.
Make Kachori like this
Take out small balls from the dough, make medium sized balls, spread them with your hands, add the gram flour stuffing and close it. After preparing all the kachoris, heat oil in a pan on medium flame and fry the rolled kachoris from both the sides till they become golden brown and crisp.
For filling of Kachori
In a bowl, add boiled potatoes, green chillies, brown gram, coriander leaves, black salt, lemon juice, black pepper powder and mix well and keep it aside.
How to serve Raj Kachori
Take out all the kachoris on paper so that the oil dries. Now place the fried Kachori in a serving plate and make a hole in the middle. Now fill it with the mixture of potatoes, green chillies, gram and coriander. Then add green chutney, tamarind chutney, curd, chaat masala. Now sprinkle some sev on top and garnish with coriander leaves and pomegranate seeds and serve immediately.
