Watermelon Barfi is a light, juicy and melt-in-the-mouth sweet, which can be prepared at home in a very short time. The natural sweetness and aroma of watermelon remains in it, due to which its taste is different from other traditional sweets. Ingredients for Watermelon Barfi
- Watermelon – 3 cups (seeds removed and cut into small pieces)
- Milk – 1 liter
- Sugar – 1/2 cup (as per taste)
- Ghee – 2 tbsp
- Corn flour – 2 tbsp
- Cardamom powder – 1/2 tsp
- Chopped pistachios and almonds for garnish
How to make watermelon barfi
- First of all, put the watermelon pieces in the mixer and prepare a smooth puree. Now filter this puree through a strainer so that the extra water and fibers present in it get separated.
- After this, pour milk in a heavy bottom pan and cook on medium flame. Keep stirring the milk continuously and cook until it thickens to about half.
- Now add watermelon puree to it and mix well. Cook the mixture on low flame while stirring continuously so that it does not stick to the bottom. After some time, add sugar and cardamom powder into it.
- Prepare a batter by mixing corn flour with a little water in a small bowl. Now pour this solution into the pan and keep stirring continuously. Due to this the mixture will start thickening quickly.
- When the mixture becomes of mawa-like consistency, add ghee to it and cook for 2 to 3 minutes more. When the mixture starts leaving the pan, turn off the gas.
- Now grease a plate or tray with ghee and spread the prepared mixture in it. Add chopped pistachios and almonds on top and press gently.
- Let the barfi cool and then keep it in the refrigerator to set for 1 to 2 hours. After this, cut it into desired shapes and serve chilled watermelon barfi.
