From halwa to kheer… these vegetables make delicious desserts that melt in your mouth in summers.

The month of June has started. The rain may bring some relief, but the humidity increases even more. In this season, seasonal vegetables should be made a part of your diet. If you have a craving for sweets after meals, then instead of ordering sweets from outside, you can make tasty desserts from these vegetables at home, from barfi to halwa and kheer. So let us know about some such desserts made from vegetables.

You can make dessert of bottle gourd, pumpkin and even cucumber among seasonal summer vegetables. Sweet and sour sorbet can be made from cucumber, kheer, barfi and halwa can be made from bottle gourd and even pumpkin halwa can be made. Sweet and Sour Cucumber Sorbet

  • First of all, cut and grate the cucumber (2 cups) but remove the seed part.
  • Heat water in a pan, add sugar to it and cook well until it dissolves, then let it cool.
  • Add grated cucumber, sugar water and half cup lemon juice and grind it. Make a smooth paste.
  • Put this paste in an airtight container and keep it to freeze for 6-7 hours.
  • After taking out from the fridge, stir well again in the ice cream maker or blend it with a blender.
  • Freeze it again for two hours. Your fresh cucumber-lemon dessert with creamy texture will be ready, in which you can also add mint.

3 desserts will be made from bottle gourd

You can make halwa, barfi and kheer from bottle gourd. Grate 500 grams of bottle gourd and first fry it in 2-3 tablespoons of desi ghee and then add 3 cups of full cream milk to it and cook till it dries. Add sugar and cardamom powder to it and cook for 3-4 more minutes so that the extra moisture gets removed. Add 1 spoon desi ghee in a pan and fry chopped almonds and cashew nuts and mix it in halwa.

You have to make bottle gourd barfi in the same way as you make halwa. At last you just have to add mawa to it and then apply desi ghee in a plate and keep the barfi to freeze. Garnish it with pistachios from above.

Bottle gourd kheer

Grate 300 grams bottle gourd and remove the seed part. Fry bottle gourd in 2 spoons of desi ghee and then add 1 liter full cream milk to it and cook till it thickens. If you want, add a little custard powder to it. Add sugar and cook until it dissolves. Add cardamom powder and chopped nuts to it. Bottle gourd creamy kheer is ready.

Make tasty pumpkin pudding

Peel and grate 500 grams of pumpkin and cook it in 2 tablespoons of desi ghee until it becomes soft. Add 1 cup milk in it and cook it until it dries up. Add sugar and then cook again as it regains moisture. Now lastly add dry fruits and cardamom powder. Add 2-3 spoons of desi ghee on top. Serve it hot. You can eat this halwa even during fasting, whereas gourd desserts are also eaten during fasting.
