Food Knife Rules: Action will be taken if rusty knife is used, FSSAI gave instructions

Food Safety and Standards Authority of India (FSSAI) has issued important instructions to all food business operators (FBOs). FSSAI has asked FBOs to use clean and food-grade knives, blades and other cutting equipment. FSSAI says that the equipment used in preparation, cutting, processing, packaging and storage of food items should be food-grade, non-toxic and corrosion resistant. FSSAI has clearly said that if the rules are not followed, action will be taken under the Food Safety Act 2006.

In fact, it has come to the notice of FSSAI that rusted, broken, painted, chipped or damaged knives and blades are being used in some food establishments. The use of such equipment increases the risk of physical, chemical and microbiological contamination of food. According to FSSAI, such equipment can spoil food.

Instructions to follow the rules

FSSAI has instructed FBOs to immediately follow the rules. FSSAI has clarified that only food-grade and rust-proof knives, blades and cutting tools should be used. All the equipment should be in good condition and there should be no rust, cracks, wear, peeling paint or any other defect.

Regular cleaning and sanitization

FSSAI has directed that all rusted, damaged or unfit equipment should be immediately removed and new equipment should be installed. Along with this, regular cleaning, sanitization and sterilization of knives, blades and cutting equipment should be done if necessary. So that there is no danger of any kind.

What will happen if you break the rules

FSSAI said that if any violation of these instructions is found at eating places, then action will be taken against them under the Food Safety and Standards Act, 2006 and related rules.

Instructions to states also

FSSAI has instructed the Food Safety Commissioners of all states and union territories and regional directors of FSSAI to keep special vigil during the inspection. Along with this, licensing authorities and food safety officers have been asked to ensure compliance with the rules and take appropriate action if violations are found.
